It has about <strong>sixty goats<\/strong>, which produce milk that, from March to November, is processed daily in the <strong>farm&#8217;s dairy<\/strong> to make <strong>fresh and mature cheeses, yoghurt and ricotta<\/strong>. The products have all received the EC marking.<\/p>\n<p>&nbsp;<\/p>\n<p>The cheeses are made from <strong>raw milk<\/strong>, mostly with lactic coagulation and some with rennet coagulation. All the cheese-making <strong>stages<\/strong> are carried out <strong>manually<\/strong>, from the processing to the maturing, without the addition of preservatives.<\/p>\n<p>The cheeses are <strong>matured with fodder produced on the farm<\/strong> using <strong>chestnut and walnut leaves<\/strong>, <strong>grape marc<\/strong> and <strong>various flavourings<\/strong>.<\/p>\n<p>The small<strong> orchard <\/strong>of the \u201cIl Mulino\u201d Farm has about <strong>30 plants<\/strong> that allow the farm to <strong>produce small quantities of jams to go with the cheeses<\/strong>.<\/p>\n<p>In the autumn, <strong>goat and pork meat<\/strong> is transformed into <strong>cured meat products and sauces<\/strong> produced in the farm\u2019s laboratory according to traditional methods.<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>The &#8220;Il Mulino&#8221; Farm is a livestock farm that breeds dairy goats.
