Breeding of dairy goats in Bovegno

The “Il Mulino” Farm is a livestock farm that breeds dairy goats. It has about sixty goats, which produce milk that, from March to November, is processed daily in the farm’s dairy to make fresh and mature cheeses, yoghurt and ricotta. The products have all received the EC marking.

 

The cheeses are made from raw milk, mostly with lactic coagulation and some with rennet coagulation. All the cheese-making stages are carried out manually, from the processing to the maturing, without the addition of preservatives.

The cheeses are matured with fodder produced on the farm using chestnut and walnut leaves, grape marc and various flavourings.

The small orchard of the “Il Mulino” Farm has about 30 plants that allow the farm to produce small quantities of jams to go with the cheeses.

In the autumn, goat and pork meat is transformed into cured meat products and sauces produced in the farm’s laboratory according to traditional methods.
